recipes you find on our pages actually work aboard a cruising boat!
We will NOT post any recipe that has not been prepared aboard a
cruising boat and found to work well in the cruising environment.
Chicken Enchiladas Mole
From S/V Chez Lynn We cooked this together with other cruisers many times. I will always smile when I remember the impromptu party where everyone in sight was invited to “roll your own”. Cooked chicken, shredded Tortillas onion cheese tomatoes avocado lettuce Sauce: ¼ jar of Dona Maria Adobo ½ C sugar large Tbsp Peanut butter 2 Cups broth or water, or mix of the two 1 cake of Don Gustavo sweet chocolate, grated Simmer all sauce ingredients together. Mole sauce is ready when everything is dissolved and mixture glazes back of spoon. If too thick, add more broth or water. Dip tortillas in hot sauce to soften. Fill with shredded chicken and roll up. Top with more mole sauce, chopped onion, cheese, tomatoes, avocado, and lettuce. Greg speaking, have you ever seen Scooby-Doo roll over in delight when he gets that great treat, well, then you have seen me eating Mole! It's THAT GOOD. |

This is a recipe that I saw on television about 6 years ago and have been making it ever since. The name of it means Get Lots Of Protein....but it also described its appearance! Pretty it ain't, but EVERYONE who has ever tried it loves it...it's just getting someone to try it that's the hard part!! 26oz jar of any salsa 1 pound extra lean ground turkey, cooked, broken up as for tacos etc 1 cup cooked rice 24 oz carton cottage cheese Throw it all together in a bowl and stir! That's it! We like to eat it wrapped in a tortilla or with tortilla chips. It's good hot or cold. |
